Need some clarification opening an LLC / SP

Hey everyone,

Although I'm mostly in idea hopping stage I wonder if it is a good idea to open up a business, which will help me with write offs for business expense, etc.

Here is the thing though:

Let's say what I'm working on falls through and I start something else. Is it recommended to open a single LLC (Xyz Enterprises) and do all of your sub business under that, or would it be better to create an LLC for each project I go through with?

Or am I looking at this wrong and a sole proprietorship is the way to go.
