Specifically when you are writing sales copy or any form of sales letters.

I always have trouble making a decision on this lol

Like the friggin' bat signal. :D

I just use "Hey there," when I don't know someone's name.

Casual = Hey there,

Formal = Hi there,

:)
Bless your heart.

You should write a book or manual on copywriting, I would buy it.
